Allergy-Friendly Quinoa White Bean Salad

Here's another spring or summertime dish. It makes a great side dish or meal and it's packed with protein.
I love this easy, delicious salad!

This recipe is free of the top 8 allergens (egg-free, dairy-free, wheat-free, peanut-free, tree nut-free, soy-free, fish-free and shellfish-free) and vegan.

Quinoa white bean salad

1 cup quinoa, rinsed
1 can white beans, drained and rinsed
3 green onions, white and pale green parts only, thinly sliced
1/4 cup grape tomatoes, sliced in half lengthwise
1 small cucumber, peeled, seeded and diced
1/2 cup dried cranberries
1/4 cup olive oil
2 tablespoons apple cider vinegar
A squeeze of fresh lemon juice
Salt and pepper

Prepare the quinoa according to package directions.
Drain and let cool, or rinse with cold water.
Stir the remaining ingredients into the quinoa until well combined.
Add salt and pepper to taste.
Adjust oil, vinegar and lemon juice as desired.
