<span style="font-family: ".sfuitext"; font-size: 17pt;">On Saturday Cody went to his first Cubs Game at Wrigley Field. This was a lot more complicated than it sounds. Here is why and how we took our severely peanut allergic child to a game at a peanut filled stadium. </span><br />

We go to many sporting events with the understanding that we may need to move from our seats if someone is eating peanuts nearby. We usually scope out a place to stand or empty seats we can move to. We talk to him about what we are doing to set expectations and so he can learn.</span><br />

<span style="font-family: ".sfuitext"; font-size: 17pt;">Cody loves baseball and his favorite team is the Cubs. We visit family in Chicago every year and he has always wanted to go to a game at Wrigley. We have told him about the peanuts there and showed him pictures when Josh and I go to games.</span><br />

<span style="font-family: ".sfuitext"; font-size: 17pt;">Last year I wrote to the Cubs and asked if they would be willing to do a peanut controlled area at one game. We got a very nice response and some really cool Cubs stuff for Cody. They responded that it’s not something they are able to do in the stadium at this time. I wish they could, but I had no expectations and understand. </span><br />
<span style="font-family: ".sfuitext"; font-size: 17pt;"><br /></span></div>

<span style="font-family: ".sfuitext"; font-size: 17pt;">Last year at school Cody burst into tears when asked to draw the place he most wanted to visit. When his teacher asked what was wrong, he said he wanted to see the Cubs at Wrigley, but there are too many peanuts, so he can’t. We didn’t realize how sad he was about it.</span></div>

<span style="font-family: ".sfuitext"; font-size: 17pt;">Cody is six and he’s already very aware of, vocal and responsible about his allergies. We decided this year it was time to try. The main reason is because there is a new ticketed park area at Wrigley, so we knew we had a place to go.</span><br />

<span style="font-family: ".sfuitext"; font-size: 17pt;">We were all excited, but anxious also. We could tell Cody was anxious and a bit overwhelmed. We prepared him by telling him the plan. We brought our wipes, safe snacks and epinephrine injectors with us. We got to the game early, went to our seats and wiped them down. </span><br />

<span style="font-family: ".sfuitext"; font-size: 17pt;">Cody’s favorite player, Anthony Rizzo, was up to bat first. He hit a triple! We got to watch two innings before the people behind us started eating peanuts. We left our seats and went to the park where Cody was able to watch the game on a huge screen, hear the crowd cheer and play catch with his cousin. He had so much fun! Was it perfect and uncomplicated? No. Did we make the best of it and have a good time. Definitely! </span><br />

He said all the peanuts were a big thumbs down, but playing in the park and watching on the screen was a big thumbs up and it was “super fun!”</span><br />

For us it’s important to teach Cody to navigate the world with his allergies, to learn how he can do things he wants to do, to learn also there are some things he can’t and that’s ok too.</span></div>

It's really difficult to find granola that works for peanut/nut allergic individuals. By making your own you can control the ingredients and sugar and customize any way you want. Start with the basic recipe and add what you like.<br />

This recipe is free of the top 8 allergens (egg-free, dairy-free, wheat-free, peanut-free, tree nut-free, soy-free, fish-free and shellfish-free) and vegan when made without honey.<br />
<br />
3 cups rolled oats<br />
1/4 cup brown sugar<br />
1/4 cup maple syrup or honey<br />
1/4 cup vegetable or coconut oil<br />
1/2 teaspoon salt<br />
<br />
Some possible additions:<br />
Sunflower seeds, pumpkin seeds, chia seeds, raisins, dried fruit (cranberries, apples, apricots, cherries, etc.), cinnamon.<br />
<br />
Preheat oven to 300 degrees.<br />
Mix oats, sugar, salt, seeds (if adding) in a large mixing bowl.<br />
Stir in the oil and maple syrup or honey.<br />
If you add dried fruit, mix it in after you bake.<br />
Spread onto a baking sheet.<br />
Bake for about 45 minutes or until golden brown. Stir every 15 minutes to ensure even browning.<br />

School has started, and this is an easy breakfast to make on school days.<br />

The start of school can be very stressful for parents of kids who have food allergies. I hope it is going well for all of you so far.<br />
<br />
It can be really difficult to find bread if you have multiple allergies. I've been wanting to try the recipe for bread from Kids With Food Allergies (link is below), but I haven't yet.<br />
<br />
This recipe (depending on the type of bread you choose) is free of the top 8 allergens (egg-free, dairy-free, wheat-free, peanut-free, tree nut-free, soy-free, fish-free and shellfish-free) and vegan.<br />
<br />

French Toast<br />
<br />
6 slices of bread that fit your allergy set. If you can't find any, here's a recipe for <a href="http://www.kidswithfoodallergies.org/page/recipe-page.aspx?recid=1843&name=Gluten%20Free%20Sandwich%20Bread">sandwich bread from Kids with Food Allergies</a>.<br />
1/2 cup oat flour<br />
1 cup oat milk<br />
1/4 cup maple syrup<br />
1 teaspoon vanilla<br />
2 -3 tablespoons vegetable oil, or dairy-free and soy-free spread (I use Earth Balance soy-free)<br />
<br />
In a large bowl combine the flour, oat milk, maple syrup and vanilla.<br />
Whisk until smooth.<br />
Heat a tablespoon of the oil or spread in a large skillet over medium heat.<br />
Dip two piece of bread in the mixture to coat evenly.<br />
Place the bread in the skillet and cook for 2-3 minutes on both sides, until golden brown<br />
<br />
Serve sprinkled with sugar and cinnamon, powdered sugar, or drizzle with maple syrup.<br />

Cody has gotten tired of the <a href="http://cookingforcody.blogspot.com/2014/10/allergy-friendly-zucchini-bread.html">zucchini bread </a>and <a href="http://cookingforcody.blogspot.com/2013/05/allergy-friendly-sweet-potato-bread.html">sweet potato bread</a> that he used to eat all the time, so I decided to try something new. This banana bread is really delicious. I never used to like banana bread because of the nuts, but I'm a big fan now and Cody loves it too..<br />
<br />

This recipe is free of the top 8 allergens (egg-free, dairy-free, wheat-free, peanut-free, tree nut-free, soy-free, fish-free and shellfish-free) and vegan.<br />
<br />
Banana bread<br />
<br />
4 very ripe bananas<br />
1/2 cup dairy-free and soy-free spread (we use Earth Balance soy-free)<br />
1 cup maple syrup<br />
3/4 cup oat milk or another dairy-free milk<br />
1 teaspoon vanilla<br />
3 cups oat flour or flour/blend of your choice<br />
1 teaspoon baking soda<br />
1 teaspoon salt<br />
<br />
Preheat oven to 350 degrees.<br />
In a large bowl mash the bananas and the spread.<br />
Stir in the maple syrup, oat milk and vanilla.<br />
In another bowl combine the flour, baking soda and salt.<br />
Slowly blend the flour mix into the banana mix.<br />
Pour into a loaf pan and bake 50 – 60 min. or until a toothpick inserted in center comes out clean.<br />
Cool completely then slice.<br />

I also want to note that it is still asthma awareness month. Many who have food allergies also have asthma. Cody and I both do. I often forget about the asthma because we have to focus so much on the food allergies, but it is a serious disease on it's own that must be properly managed. And anyone with food allergies and asthma should be aware that allergic reactions can be more severe.<br />

Even though I have lived my entire life with a life-threatening allergy to fish, I still was not very good at talking about it. And it's just different when you have a child entering school with multiple, severe food allergies.</span><br />

<span style="font-family: Times, Times New Roman, serif;">I knew that I had work to do in order to effectively advocate for him and to teach him to advocate for himself with confidence, and to try to keep him from being overly fearful. This blog was my way to do that and to practice as much as possible before sending him off on his own to school. </span></div>

I found out you can buy dyeable craft eggs.</div>

We got ours from Michael's. To dye the eggs we used rice, food coloring and ziplock bags. Just put some rice and food coloring in a ziplock bag and shake it up to coat the rice. Then put in the egg and shake.</div>

Preheat oven to 425 degrees.</div>

In a large bowl combine the flour, baking soda and salt. stir in the oat/rice milk and vinegar until well combined. </div>

The dough should be just slightly sticky. You may need to add a little more flour or oat/rice milk to get the right consistency.</div>

Form into a round loaf, cut a large X in the top and place on a baking sheet.</div>
<div class="MsoNormalCxSpMiddle" style="margin-bottom: 0.0001pt;">
Bake for about 35 - 40 minutes or util golden brown.</div>

I love Asian food, but with peanut oil, fish sauce and oyster sauce it's pretty much an allergy nightmare for our family. And if you're allergic to soy, forget it. </div>

Slice the meat into thin strips.</div>

In a large mixing bowl combine the orange juice, vinegar, brown sugar and salt. Add the meat to the bowl and marinate for at least 30 minutes in the refrigerator. </div>

Prepare rice according to package directions.</div>

Remove the meat from the marinade, but do not discard it. Heat the oil over medium high heat in a wok or large skillet.</div>

Cook the meat until browned on both sides.</div>

Add the beef back to the skillet.</div>

No baking required! My mother-in-law makes these. They are like rice crispy treats, but you can either use rice cereal or corn flakes. I made some of each.<br />

These were supposed to be green, but I put the yellow food coloring in before realizing I was out of blue. Oops! These thing happen sometimes.<br />
<br />
AllerEnergy makes good marshmallows that are free of the top eight allergens. If you are allergic to fish like I am, be aware that some marshmallows use a fish gelatin in them. I was really surprised to find that out and it's another example of why we always have to read ingredient labels. Allergens can show up in unexpected places.<br />
<br />
I use Color Garden and India Tree natural food colors and Surf Sweets jellybeans to decorate.<br />
<br />

Wreath Cookies<br />
<br />
6 cups crispy rice cereal, or corn flakes (I use Erewhon brand)<br />
1 package marshmallows that are safe for your allergies<br />
1/4 cup vegetable shortening or Earth Balance soy-free spread<br />
1/4 teaspoon salt (omit if using the spread since that has salt)<br />
<br />
Melt the shortening and salt or spread in a large saucepan over low heat.<br />
Slowly stir in the marshmallows until completely melted.<br />
Remove from heat, add the rice cereal and stir until cereal is completely coated with marshmallow.<br />
Press into a greased baking pan, let cool completely and cut.<br />
To make rice crispy "cupcakes" spoon into decorated baking cups immediately after combining the cereal and marshmallow. Let cool completely.<br />

And they deserve that title. They're simple, but delicious. I remember my Grandmother's house often smelling of baking biscochitos as she always had them around. Biscochitos are especially popular as a Christmas cookie.<br />

I decided this year to try my Grandmother's recipe with modifications to substitute the wheat flour and egg. I have started to use a combination of pureed sweet potato and apple sauce to substitute for egg. I think the sweet potato makes for better texture and it adds a nice color.<br />
<br />
People say to use lard and ONLY lard for these cookies, but I didn't have any, so I used vegetable shortening. And I really didn't notice the difference.<br />
<br />
I am really happy with the result. I can't even tell the difference and Cody loved them too. The best part was that familiar smell of biscochitos baking in the oven!<br />

Biscochitos<br />
<br />
¼ cup sugar<br />
2 tablespoons cinnamon<br />
<br />
2 cups lard or vegetable shortening<br />
1 ½ cups sugar<br />
2 teaspoons anise<br />
¼ cup applesauce<br />
¼ cup sweet potato puree (I use baby food)<br />
6 cups oat flour<br />
4 teaspoons baking powder<br />
1 teaspoon salt<br />
½ cup apple cider<br />
<br />
Preheat oven to 350 degrees.<br />
Combine the ¼ cup sugar and cinnamon in a bowl and set aside.<br />
Combine the lard or shortening, 1 ½ cups sugar and anise until creamy.<br />
Stir in the applesauce and sweet potato.<br />
In another bowl combine the flour, baking powder and salt.<br />
Sir the flour mixture into the lard/shortening mixture.<br />
Add the cider or brandy and mix until well blended and stiff dough is formed.<br />
Press or roll the dough into ¼ or ½ inch thickness.<br />
Cut with a pasty knife into small squares or use cookie cutters. <br />
Dip tops of the cookies into the cinnamon sugar and place sugar-side up on a cookie sheet.<br />
Bake about 12 - 15 minutes until lightly browned.<br />

Fresh cranberry sauce is so good and so easy to make. You'll never buy it in a
can again once you make your own. Plus there are so many different things you
can do with it. A lot of times I make it with red wine and I was contemplating
trying one with caramelized onions. <o:p></o:p></div>

1 12 ounce

2 tablespoons

In a medium saucepan, combine the juices, marmalade, sugar and cinnamon stick.
Bring to a boil, stirring until the sugar is dissolved. Add the cranberries,
reduce the heat to medium and simmer for about 10 minutes, stirring
occasionally. Be sure to remove the cinnamon stick before serving.<o:p></o:p></div>
